I LOVE trying new salads, especially TASTY ones!  This has got to be one of my favorites lately.  It’s vegan, it’s clean, it’s all whole fresh foods.  If you want to eat clean, this is definitely a great way to start!

Almond Carrot Ginger Veggie Salad

Wholesome Ingredients:

Sauce:

  • 1/2 inch fresh ginger, minced
  • 1 small clove garlic, minced
  • 1/2 Tbsp organic maple syrup
  • 1/2 Tbsp Bragg’s Liquid Aminos
  • 2 Tbsp almond butter
  • 1 tsp ground turmeric
  • 1 Tbsp water

Salad

  • 1/2 cup chopped or shredded carrots
  • 1/2 cup cooked quinoa or brown rice
  • 1 cup cabbage, shredded
  • 1/2 small yellow pepper, chopped

Directions:

  1. Prepare quinoa according to package instructions if not already prepared.  If prepared, place 1/2 cup quinoa in desired bowl you’ll eat from and set aside.
  2. For the sauce, blend all sauce ingredients in blender or food processor and blend together just until smooth.  Set aside.
  3. wash needed vegetables.  Chop into bite sized pieces.
  4. Top rice or quinoa with all veggies, then pour sauce on top.  Toss.  Enjoy!
