Chopped Southwest Salad with Cilantro Lime Dressing

One of my favorite salads to date!  So fresh, perfect for the summertime, and you could eat it with a spoon!  This chopped southwest salad with cilantro lime dressing is going to be the hit at any event!

Ingredients: 

  • 2 large heads of romaine, micro-chopped
  • 1/2 cup fresh cilantro leaves, micro-chopped
  • 2 cups cooked chicken, micro-chopped
  • 1/2 cup pico de gallo
  • 1 15-oz can of black beans
  • 1 1/2 cups corn
  • 1/4 cup green onion, micro-chopped

 

Cilantro Lime Dressing:

  • 1 1/2 cups fresh cilantro, loosely packed (stems and leaves)
  • 1/3 cup olive oil
  • 1/4 cup lime juice
  • 1/4 cup green onion, chopped
  • 1-2 TBS honey
  • 1/2 tsp salt
  • 1/4 tsp pepper

 

Directions:

  1. Add all of your dressing ingredients to a food processor or blender and pulse/blend until smooth.
  2. To your serving bowl, add all of your finely chopped salad ingredients and toss with your dressing.
  3. Serve and enjoy!
