Chopped Southwest Salad with Cilantro Lime Dressing
One of my favorite salads to date! So fresh, perfect for the summertime, and you could eat it with a spoon! This chopped southwest salad with cilantro lime dressing is going to be the hit at any event!
Ingredients:
- 2 large heads of romaine, micro-chopped
- 1/2 cup fresh cilantro leaves, micro-chopped
- 2 cups cooked chicken, micro-chopped
- 1/2 cup pico de gallo
- 1 15-oz can of black beans
- 1 1/2 cups corn
- 1/4 cup green onion, micro-chopped
Cilantro Lime Dressing:
- 1 1/2 cups fresh cilantro, loosely packed (stems and leaves)
- 1/3 cup olive oil
- 1/4 cup lime juice
- 1/4 cup green onion, chopped
- 1-2 TBS honey
- 1/2 tsp salt
- 1/4 tsp pepper
Directions:
- Add all of your dressing ingredients to a food processor or blender and pulse/blend until smooth.
- To your serving bowl, add all of your finely chopped salad ingredients and toss with your dressing.
- Serve and enjoy!
