Slow Cooker Shredded Sesame Chicken
Ever since we did our remodel in our kitchen, I’ve fallen IN LOVE with my slow cooker! Now I just look forward to all the many recipes I can play with, with this neat little kitchen gadget 😛 Plus, I’m a busy mom, and simple eating is a necessity. Simple, fast, easy, AND healthy. This slow cooker shredded sesame chicken was a HUGE hit in my house!!
Ingredients:
- 3 organic, boneless, skinless chicken breasts
- Salt and pepper
- 1 cup honey
- 1/2 cup Braggs liquid aminos
- 1/2 cup diced white onion
- 1/4 cup ketchup
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 2 tsp cornstarch dissolved in 3 Tbsp water
- Sesame seeds
Instructions:
- Start by seasoning the chicken lightly with salt and pepper, and place in slow cooker
- In a bowl, combine honey, Braggs, onion, ketchup, oil, garlic, and pepper flakes.
- Pour over chicken.
- Cook on LOW for 4 hours, or on HIGH for 2 hours, or just until chicken is cooked through.
- Remove chicken from slow cooker with a slotted spoon, leaving sauce behind.
- Dissolve 2 tsp of cornstarch in 3 Tbsp water and pour into slow cooker. Stir to combine with sauce. Replace lid and cook sauce on HIGH for 10 more minutes until the sauce has thickened.
- Shred chicken with 2 forks and then return to pot and toss with sauce before serving.
- Sprinkle with sesame seeds and serve over rice, quinoa, noodles, or salad.
Store in a tupperware for a couple nights making healthy dinners easy, as well as spend less time in the kitchen. Meal planning for the win!
