Turkey Sloppy Joes!!
I remember growing up that sloppy joes were a favorite in my household. They were from one of those packages, though, so I don’t know how healthy they were. Plus they were made with ground beef instead of turkey….In fact, I KNOW they weren’t healthy. These days I like to know EXACTLY what’s in my food, and this recipe shows you EVERYTHING, with not a single bad ingredient. How bout that! Ingredients:
- 1 tsp olive oil
- 1 medium onion, chopped
- 1 medium red bell pepper, chopped
- 2 cloves garlic, chopped
- 1 lb raw ground 93% lean turkey breast
- 1/4 tsp Himalayan salt
- 1/4 tsp ground black pepper
- 1 1/2 cups healthy tomato sauce
- 1 tsp Worcestershire sauce
- 3 Tbs all-natural tomato paste
- 1 Tbs Pure maple syrup
- Finely chopped fresh parsley

Directions:
- Heat oil in large skillet over medium heat.
- Add onion and bell pepper; cook, stirring frequently, for 4-5 minutes, or until onion is translucent.
- Add garlic; cook, stirring frequently for 1 minute. Transfer onion mixture to a medium bowl. Set aside.
- Add turkey to the same skillet; cook, over medium heat, stirring frequently to break up the turkey, for 8-10 minutes, or until the turkey is no longer pink.
- Season with salt and pepper.
- Add onion mixture, Healthy Tomato Sauce, Worcestershire Sauce, tomato paste, and maple syrup. Mix well. Reduce heat to medium-low; gently boil, stirring occasionally, for 15-20 minutes, or until sauce has thickened.
- Sprinkle each serving with parsley before serving, if desired.
I actually doubled the recipe to have this meal all week long, and created different meals with it. I made the sandwich which is shown above, as well as just covered a bed of arugula with the sloppy joe mix, eliminating the carbs for an evening meal.
