Healthy Turkey Grilled Cheese

We’ve been looking for new recipes to mix up our menu a little and ran across this one that just looked so easy and delicious.  I’m all about simple and easy, little prep work, and something the kids will love.  Initially this didn’t call for turkey, but turkey just sounded even more delicious so I gave it a whirl.  And it’s even 21-Day Fix approved!

Ingredients:

  • 2 slices sprouted whole grain bread (I used Ezekiel bread)
  • 1 tsp Dijon mustard
  • 1 oz roasted red bell pepper strips
  • 1 slice medium tomato
  • 1/4 cup fresh arugula
  • 1/4 cup shredded smoked Gouda cheese
  • 2 slices roasted turkey
  • 1/2 tsp olive oil

Directions:

  • Spread mustard on one slice of bread
  • Top with pepper strips, tomato, arugula, cheese, and second slice of bread.  Set aside.
  • Heat oil in medium nonstick skillet over medium high heat.
  • Add sandwich; cook for 2-3 minutes, or until golden brown.  Flip, then cook for 3-4 more minutes or until cheese has melted.

NOTE:  I used a nonstick skillet, but discovered that when I flipped the sandwich to the other side, ingredients when flying.  (LOL)  If you have a pannini maker, that may be more sufficient, hold your sandwich tightly together, and melt the cheese faster.
