Cappuccino Protein Waffles

Breakfast is my favorite meal of the day (well one of them!) And I LOVE trying new pancakes or waffle recipes.  I found this recipe not too long ago and changed it up a bit, making these cappuccino protein waffles a more healthier version with extra protein.  Feel free to change it up how you would like, but these were really good. 🙂

Ingredients:

  • 1 cup whole wheat pastry flour
  • 3 Tbs coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • dash of salt
  • 2 Tbs cacao powder
  • 1 scoop Shakeology
  • 1 scoop vanilla protein powder
  • 2 shots decaf espresso
  • 1 tsp vanilla extract
  • 1/2 cup egg whites
  • 60 drops stevia sweetener
  • 1 cup almond milk

Directions:

  1. Mix dry ingredients together.  Mix wet ingredients together.  Combine both wet and dry ingredients until well combined.
  2. Heat waffle iron and spray with olive oil nonstick spray
  3. Pour batter into waffle iron and cook.
  4. Top with berries or peaches (or desired toppings)
  5. ENJOY!

A tip when you’re making waffles or pancakes, double or triple the batch, freeze them, and have more for later in the week.  Meal prepping is so key.  It helps to save time, save money, and save your health.
