Moroccan Carrot Salad!!!

I love trying and eating new things, especially if they’re easy and healthy!!!

Makes 1 serving

Ingredients:

-2 medium carrots, grated
-1/2 tsp extra-virgin olive oil
-2 tsp fresh lemon juice
-2 Tbs chopped fresh cilantro or parsley
-1/2 clove garlic, chopped
-dash ground cumin
-dash ground paprika
-dash cinnamon
-dash Himalayan salt
-dash cayenne pepper

Directions:

combine carrots, oil, lemon juice, cilantro, garlic, cumin, paprika, cinnamon, salt and cayenne in a large bowl, mix well.

Let salad marinate, covered in refrigerator, for 2-3 hours before serving.

Serve over baby spinach or baby arugula and enjoy!
