Power Protein Pumpkin Spice Waffles
As a health and fitness coach, I’ve been learning over the years just how important proper nutrition is, macro counting, and getting enough protein in your diet each day. It is IMPERATIVE that we hit our daily protein not only to get max results, but for our bodies to function at peak level. Protein helps literally EVERYTHING function that much better, from recovery, to more energy to muscle protein synthesis.
Recently I invested in a protein pancake mix that I LOVED, but I didn’t just want to buy it on a continual basis. I wanted to have everything I needed on hand to be able to make these whenever I wanted. So I created my own power protein pumpkin spice waffle recipe (which can be used for pancakes as well!)
So here’s yours truly sharing my own recipe with you so that you can not only enjoy the most important meal of the day, but also get your protein fix in your first meal 🙂
Ingredients:
- 1 cup whole wheat pastry flour
- 5 scoops Level-1 vanilla ice cream protein
- 2 tsp baking powder
- 1 TBS packed brown sugar
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
- 1/2 cup almond milk (add more as needed)
- 1 TBS butter
- 5 TBS canned pumpkin
- 1 egg
Directions:
- Mix dry ingredients together in large bowl.
- Mix wet ingredients together in small bowl.
- Pour wet ingredients into dry ingredients and mix well.
- Using heated waffle iron, pour one huge scoop of batter into middle of iron. Cook for approximately 1 min.
Top with berries, side with eggs, or whatever your heart desires, and enjoy!!!!
