Strawberry Watermelon Salad


  • Baby Arugula
  • 2 Tbs chopped basil
  • 1 Tbs feta cheese
  • 1/2 Cup sliced strawberries
  • 1/2 Cup cubed watermelon
  • Olive oil and balsamic vinaigrette
  • Chopped pistachios
  • Top with your favorite healthy chicken recipe (my chicken I used is HERE)


Mix first 6 ingredients together in mixing bowl, pour onto plate, and then top with chicken and pistachios.  Enjoy!!
