The BEST Gingerbread Cookie Recipe

 

I shared making these with my girls on my social media, and the response was so outrageious that I decided to make this recipe public.  And because I love to give back, I’m gifting you this incredible recipe.  You’re welcome!

This was the first year that I made these cookies with my girls. My girls love to bake, and I think we’ve found a new favorite holiday treat!  BEWARE:  HIGHLY ADDICTIVE!  So if you’ve been looking for the BEST gingerbread cookie recipe, THIS IS IT!  Guaranteed to become a holiday favorite for the entire family!

Ingredients:

  • 2/3 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 2/3 cup molasses
  • 1 large egg
  • 1 tsp vanilla
  • 3 1/2 cups whole wheat pastry flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 TBS cinnamon
  • 1 TBS ground ginger
  • 1/2 tsp allspice
  • 1/2 tsp cloves

Directions:

  • In a large bowl, beat the butter until smooth and creamy.  Add the brown sugar and molasses, and beat until well combined.  Next, beat in the egg and vanilla.
  • In a separate bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, allspice, and cloves.  Then slowly mix these ingredients into the wet ingredients until combined.  Divide the dough in half.  Then wrap each dough ball in plastic wrap and press them into flat circles.  Chill for at least a few hours.
  • Preheat oven to 350℉. Sprinkle lots of flour onto a work surface.  Roll out the dough until it is 1/4 inch thick.  Cut into shapes.  Place shapes on parchment-lined baking sheets.  Bake for about 8-11 minutes.  Allow cookies to cool for a few minutes on the cookie sheet.  Move to a cooling rack to finish cooling.
  • Enjoy plain or decorate with icing and candies.

Holiday tip:  Double the batch for holiday parties or gifts.  Grab some small gift boxes as party favors for all the kiddos.
