Sourdough Starter Vanilla Protein Pancakes

When you need to use your starter for something, pancakes it is!  Super easy, no overnight fermenting necessary, and if you need some extra protein, just add some vanilla protein powder (see what I used below!)  Also… kiddo approved, “best pancakes you’ve ever made, mom!”  So, I’d say it’s a WIN!

Ingredients:

  • 100 g sourdough starter discard
  • 200 g whole wheat pastry flour
  • 200 g almond milk
  • 3 scoops vanilla protein powder (I use Level-1 Vanilla Ice Cream)
  • 4 TBS melted butter
  • 2 1/2 TBS brown sugar
  • 1 egg
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Directions:

  1. Add the sourdough starter, almond milk, egg, butter, vanilla, and sugar to a bowl.  Whisk well until just combined.
  2. Now add the flour, baking powder, and salt to the liquid ingredients and whisk until well combined and a batter forms.
  3. This batter is ready to use straight away.
  4. Heat a large frying pan and add a little butter to grease it.
  5. Cook the pancakes to your desired size (use a mini soup ladle to scoop out the ixture.  Let all the bubbles fully form on the surface before you flip them over.  A lower heat is better as it lets the bubbles develop without burning the outside.
