The BEST Chocolate Cake!

If you want a chocolate cake (and frosting!) that will turn heads, this is it!  It’s no ordinary chocolate cake.  This is LEGIT the BEST chocolate cake you’ll ever have!  This one is special, and can be used for any occasion.  We usually use it for birthdays, but any event is fine!

 

Ingredients – Cake:

  • 2 cups white sugar
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • ½ cup coconut oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Ingredients – Frosting:

  • 4 oz Baker’s semi sweet chocolate cacao (premium baking bar)
  • 4 pz Baker’s unsweetened chocolate cacao (premium baking bar)
  • 1.5 lb organic powdered sugar
  • 1/2 cup REAL butter
  • 2 tsp vanilla extract
  • 1 cup whole milk

Directions:

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  2. Make cake: Stir together sugar, flour, cocoa, baking soda, baking powder, and salt in a bowl.
  3. Add eggs, milk, oil, and vanilla; mix for 3 minutes with an electric mixer. Stir in boiling water by hand.
  4. Pour evenly into the prepared pans.
  5. Bake in the preheated oven until a toothpick inserted into the centers comes out clean, 30 to 35 minutes. Cool for 10 minutes before removing from pans to cool completely.
  6. While cakes cool, make frosting: Melt chocolate in a bowl in the microwave stopping to stir every 20 seconds until melted.  Let cool slightly.
  7. Put butter, vanilla, and chocolate in a bowl and mix with a hand mixer thoroughly.  Slowly begin adding powdered sugar.  Careful, it will fly everywhere so use slow speed!  When it is getting stiff, add slight amounts of milk.
  8. Keep adding the sugar alternating with the milk, ending with the milk until desired consistency.  It must be used right away becuase it will stiffen.
  9. You may want to put cake in the freezer before frosting to make it easier.  The cake may crumble due to stiffness of the frosting.  Try not to let the frosting be too stiff before you start using it.
