Chocolate Hazelnut Protein Waffles

If you love chocolate and hazelnuts, you will LOVE these!

Ingredients:

  • 1 cup Hazelnut meal
  • 1 cup whole wheat flour
  • 1 cup chocolate Shakeology
  • 4 Tbs cocoa powder
  • 4 Tbs coconut flour
  • 6 Tbs Stevia
  • 1 Tbs baking powder
  • 4 eggs
  • 1/3 cup Greek yogurt
  • 4 Tbs coconut oil
  • 2 cups almond milk
  • 2 tsp hazelnut extract
  • 1/2 tsp stevia extract

Instructions:

  1. Preheat waffle iron to medium high.  Preheat oven to 200F and place a wire rack over a baking sheet.
  2. In a large bowl, whisk together hazelnut meal, protein powder, cocoa powder, coconut flour, and sweetener.
  3. Whisk in eggs, yogurt, coconut oil, hazelnut extract, and stevia until well combined.
  4. Grease waffle iron if necessary and pour into waffle iron.
  5. Close the lid and cook until browned and crisp.  Gently remove and transfer to prepared baking sheet in oven to keep warm.
  6. Repeat with remaining batter.
  7. Top with berries or nut butter.  If you want to make it a cheat, top with cool whip, whipped cream, butter, chopped hazelnuts, syrup, whatever you desire.
