Mozzarella-Stuffed Waffles

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup finely ground cornmeal
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 3 egg whites
  • 1 cup almond milk
  • 1 low fat mozzarella string cheese PER waffle
  • Marinara sauce

Instructions:

Mix dry ingredients then add egg whites and almond milk.  Heat waffle maker to medium heat.  Quickly pour a little batter onto each waffle square and piece apart string cheese (best to do this before hand to work quickly) and lay on top of batter.  Cover cheese with a little more batter and press down top of waffle maker.  Cook until done.
