applesauce muffinsApplesauce Muffins from Deceptively Delicious (So great to get your kiddos to eat their veggies!!)

Topping:
-2/3 cup old-fashioned oats
-¼ cup brown sugar
1 tsp cinnamon
-2 Tbs margarine, melted

Batter:
-2/3 cups whole wheat flour
-1 cup old-fashioned oats
-1 tsp baking powder
-½ tsp baking soda
-½ tsp cinnamon
-1 cup unsweetened applesauce
-½ cup almond milk
-½ cup carrot puree
-½ cup dark brown sugar
-¼ cup olive oil
-1 large egg

Directions:
-Preheat oven to 400 degrees
-Prepare muffin tin
-For topping: Stir together oats, sugar, and cinnamon in a bowl. Then stir in the margarine
-For batter: Combine flour, oats, baking powder, baking soda, and cinnamon in large bowl. In a second bowl, mix applesauce, milk, carrot puree, sugar, oil, and egg. Add flour mixture slowly.
-Divide the batter evenly among the muffin cups and sprinkle with streusel topping. Bake 18-20 minutes.
